National Pie Day: The Benefits of Stewed Apples and Our Gut Health

#NationalPieDay: This is a great recipe as an alternative to Apple Crumble. It is perfect to have on a cold evening, much like we’ve been having these past few weeks! It is especially good for sweet cravings as the ingredients used are superb for gut health – which in turn has an impact on your mental health.

Some possible signs that you might not have the best gut health include: bloating, gas, diarrhea, constipation, and fatigue. You may also have loose, unformed stools, foul smelling feces and a low mood.

Stewed apples have gut healing properties thanks to a type of fibre called pectin found in the skin. It is released during the stewing process and can help maintain and repair the intestinal mucosa lining.

Ingredients:

4-5 apples (depending on the size), cut into quarters, cored and sliced into half moons
3-4 pears (depending on size, peeled a little, especially if the skins are tough, then cut as above.
1/4 cup coconut oil or ghee
2 inches of fresh ginger, peeled and grated (optional)
1 tablespoon of cinnamon
1/4 tsp of nutmeg
2 tablespoons of honey
1/4 tsp sea salt
1/2 cup of ground almonds
1/2 cup of ground hazelnuts

Add the prepared apples and pears into a pan with an inch or so of filtered water. Put the lid on and heat gentle and cook until soft (10 minutes). Keep checking them that there is still water at the bottom – it doesn’t matter if it evaporates a little.. as long as they don’t burn!

Once soft, add the coconut oil or ghee, fresh ginger (if using, cinnamon and nutmeg and stir well.

Transfer this mixture into a baking dish and top with the ground nuts. Then drizzle the honey and add sprinkle the salt.

Place in the a preheated oven (160-170 degrees C / Gas 5) for about 20 minutes.

Serve with some natural full fat yoghurt or some coconut cream.
